Default Food.

saw one in the archives, figured why not?

So...

1. favorite fast food?
2. favorite local specialty of current residence?
3. things missed from past residences?
4. five perfect foods? three perfect desserts?
5. most ambitious dish attempted?
6. something you do not eat, but don't know why?

for me...
1. In-N-Out. No question.
2. Dungeness crab and microbrews (Crispin and collective, any other good stuff?)
3. SF Bay: wine, beef, cheese, and bread (sourdough). NYC: Bagels, pizza, hot dogs, and candied nuts
4. quiche lorraine, beef stew, fried chicken, nigiri sushi, tortellini and pesto. Desserts: chocolate souffle, creme brulee, peach cobbler with ice cream.
5. black mussel souffle with saffron cream sauce.
6. Mayo

1. favorite fast food?
Burgerville. Do places like Chipotle or Subway count?

2. favorite local specialty of current residence?
Craft beer. Oh, food. I guess cedar-plank salmon. I've lived here forever and can't think of many local food specialties.

3. things missed from past residences?
Good pizza and wings from Syracuse. And half-moon cookies.

4. five perfect foods? three perfect deserts?
Foods
1) Chicken makhani
2) Burritos (almost any kind)
3) Juanitas chips and Emerald Valley salsa
4) Pizza (almost any kind)
5) Chinese chicken salad

Deserts
1) The Sahara
2) The Mojave...oh, wait.

Desserts
1) Half-moon cookies
2) Pie and ice cream
3) Yellow cake with chocolate frosting

5. most ambitious dish attempted?
Hmm... Probably arroz con pollo. I burnt the rice just a little, but it was otherwise delicious.

6. something you do not eat, but don't know why?
I know exactly why I don't eat everything I don't eat. There isn't much, so it's easy to keep track.

Sure they count. I'll order some chipotlaway.

what's burgerville though? I haven't seen any here, maybe just Portland?

I agree there. I never cared much for beer until I moved here.

I was wondering who would put hot fudge on cheesecake, but the answer is apparently intuitively obvious.

The worst ass kicking I ever got as a kid was when my mom bought strawberry jelly instead of the right kind of jelly for peanut butter and jelly (if you are asking which jelly is the right kind, then you don't have a fucking clue about PB&J). I said a very nasty word because I didn't know anyone else was in the kitchen. I think I was in 5th grade.

Lol, so no animal style? the onions for it are carmelized with mustard. genius.

Their fries suck though, no idea how you can fuck up a simple starch deep fried in fat. Just order 'em well done.

No In-N-Out in OR though,

It just occurred to me...
Funnel Cakes.
No fruit crap or ice cream on it, just powdered sugar.

That's practically an /thread right there.

The event where I was hired to make the mussel souffles we tried bananas dipped in waffle batter and deep fried for dessert. A little ice cream on the side. Went over really well, we were hired again. But forget the 'nonsense'. deep fried waffle batter ftw.

So...

Default input?

Gonna get access to one of these babies soon...
the task is to develop a summer liqueur, to be served chilled, on its own (no mixers)

I was orginally going to roast peaches and cherries with lemon zest, cloves, black pepper, and cinnamon. then put it in the still with a good bit of vodka, then mix it with a very light lemonade (more like sweet lemon water).

But I've been informed that cinnamon and cloves are too "autumney".

Any suggestions on what sort of spices or other substances would be more in the "summer spirit" (as the current employer calls it)? Peaches and cherries are still a go. as is the lemonade and zest (and black pepper too, but I don't want it without the cloves).

What aromas just shout "summer" to you?

1. Favorite fast food?Um, Wendy's. Canadian Wedny's. Bacon Cheeseburger with sea-salt fries and a vanilla frosty. Perfection.

2. Favorite local specialty of current residence?I don' tknow if it counts as local, but poutine is pretty awesome, and Canadian, so I say poutine.

3. Things missed from past residences? While I've never lived there, I feel like I missed out by not having my grandmother around the corner making me empanadas. I buy them now in Toronto (and not cheap!) cause they are so damn tasty.

4. Five perfect foods?
- pulled pork sandwich, heavy on the sauce
- BLT with fresh ingredients and extra crispy bacon
- greek salad with NO lettuce or peppers
- fettucine alfredo, al dente (obvs) with homemade alfredo sauce and a splash of lemon juice
- authentic Chilean beef empanada

Three perfect desserts?
- crepes, with anything
- arroz con leche (homemade)
- carrot cake with really good cream cheese icing

5. most ambitious dish attempted?
Oooh. Good question! I'd have to say though, that my FH and I cook together and tackle most things pretty successfully. Maybe we haven't tried fancy enough, but we prefer hearty, simple food to airy fairy froufrou stuff. The beef bourginon was labour intensive though....

6. Something you do not eat, but don't know why?
Fish, shellfish, seabugs...bleh. And I know why. It smells. And don't tell me it doesn't smell if it's fresh. Yes, it does. It smells gross. Bleh.

7. What food is so awesome it requires no defense? Something that no sane person free from kosherism or veganism could refuse?
Bacon. Really well done, crispy bacon.

1. favorite fast food?
I don't really eat that much fast food (or rather, not enough to have an opinion on what's "best") so I'll say the pizza place across the road from where I live. The pizza's cheap, close and tastes... reasonably good. And the entertainment is great! Dai once walked in there in the middle of a fistfight between two of the cooks.

2. favorite local specialty of current residence?
drop. I LOVE the stuff.

3. things missed from past residences?
proper bread. The stuff here doesn't taste like anything and has the subsistence of air.

4. five perfect foods? three perfect desserts?
perfect foods:
1) a simple stew - it tastes wonderful the first day and even better the 2nd day.
2) tomato soup with meatballs
3) mashed potatoes with bacon, pickles and onions
4) guacamole (not sure if it counts as food)
5) nuts

Perfect desserts:
as long as it goes with coffee, I'm good.

5. most ambitious dish attempted?
hmm, that depends on what you call ambitious. the thing that's in English called a Swiss roll looks pretty spectacular but is easy to make, just have to be very quick with the stuffing and rolling.

6. something you do not eat, but don't know why?
The only one I don't eat for no particular reason is ketchup. I love tomatoes, tomato soup and tomato paste and bbq sauce but not ketchup. Not sure why. For the rest of the things I don't eat, I know exactly why I don't eat them

7. awesome food
there are many: Old Amsterdam Cheese served with sharp mustard. Avocado in any form, all fruits and berries except for bananas (it's not that I don't like bananas, it's that I don't anything them), COFFEE - well made, from a nice mix of beans (I like Robusta more than Arabica), medium dark roast and NO goddamn whip cream, milk, or any other milk product in it, you'll ruin the taste! Preferably also no sugar. Milk and sugar are just for masking the taste of bad coffee, and if you're drinking bad coffee, I want to know why.

1. favorite fast food?

Taco Bell. 2 soft tacos, 1 7 layer burrito, 1 chili cheese burrito. Then make taco smells for the next 6 hours.

2. favorite local specialty of current residence?

Place called Tanner’s. they make awesome chicken lips and southern style fried chicken tenders. Add buffalo sauce and their home made bleu cheese…***drools***

3. things missed from past residences?

Fresh seafood. I grew up at the beach. The marinas that the local watermen worked from all have little restaurants. The fresh catch of the day was always the best thing to order. Regardless of what it was! Cajun fried/blackened rockfish, grouper, mahi, wahoo, etc. All delicious. And nothing like picking a dozen steamed crabs. Heaven on earth!

The seafood stuffed mushrooms and crabmeat spinach and artichoke dip that they do at this one place is also to die for! I've attempted to emulate the mushrooms and gotten close, but the dip I just can't figure out.

4. five perfect foods? three perfect desserts?
Foods:
-Pizza
-chili on fritos with cheese and sour cream on top.
-BBQ – any variety.
-Manicotti.
-Blackened grouper (particularly filets from red grouper – can get some real thick filets).
Desserts:
-key lime pie
-fresh, soft chocolate chip cookies.
-Fresh, gooey fudge brownies.

5. most ambitious dish attempted?

The pizza I make from scratch. Dough, sauce, everything from scratch, using all fresh ingredients. 4 hours from when the yeast first starts activating to when a pie comes out of the oven.

Another is not really a dish but I make homemade lemoncello. If you have a cold or are stuffed up from allergies, my recipe will open you right up. Of course, after a dose of the stuff, you won’t care one way or another. Takes a week from start to finish.

And of course homebrewing. Had one bad, skunky batch, one that was too cidery but still not horrible, the rest have turned out very well.

6. something you do not eat, but don't know why?

Don’t eat sweet potatoes. They don’t like me. Bad things happen when they touch my tongue. Not sure why…but just the smell is enough to make me nauseated.

1. favorite fast food?
McDonalds French Fries and Burger King chicken tenders.
2. favorite local specialty of current residence?
In the town that I live in, it would have to be Corona Village. Excellent Mexican food there.
3. things missed from past residences?
A place called Wingers. Great food. Closed a few years back because the owner wanted to retire but couldn't find a buyer.
4. five perfect foods? three perfect desserts?
Ramen, beef enchiladas, charcoal grilled burgers, chicken alfredo, and spaghetti. Cheesecake (marble), chocolate fudge, and Wendy's Frosties.
5. most ambitious dish attempted?
Pickled pigs feet. Never again.
6. something you do not eat, but don't know why?
Mushrooms. Probably because I associate them with fungus of various sorts that grows in disturbing places.
